Lady Peach

The base of a saison with a rustic touch given by Emmer Wheat. A quick pass in Chardonnay barrels gives it a bit of wildness. At the end of the 3 months aging in barrels we add peach pulp. Sweet flavors of the fruit invade the nose, while taste is fresh, slightly sour and refreshing. Tantalizing.

Madame Galaxie

It all starts with a hoppy saison. Then we delicately pour it in Chardonnay barrels and leave it there for six months. The result is a sour saison with hints of apricot, spices and fermenting wine. Soft, with a very fine perlage and a long acidic freshness.

DR RAY

A blend of different batches of X-Ray aged in Nebbiolo barrels, cut afterwards with some freshly brewed X-Ray to which we added fresh Vanilla pods. Nose is a delicate encounter bewteen roasted notes from dark malts and vanilla flavor, together with some dried fruits. Mouth confirms nose feelings and it shows a higher drinkability than expected.

The Spaghetti Western

Different Spaghetti Western batches aged for six months in Grappa barrels. Armoa is rich and intense, recalling grape, coffee liquor and black cherries. Mouth is dry, body is light with a slight winey acidity.

THE PILGRIM

Barley Wine fermented with saison yeast and aged in Marsala barrels for one year. Brother to La leggenda El Fernando, Marsala barrel aging marks the real difference with La Leggenda: after pouring it and letting it rest for a while, plums and raisins notes emerge clearly.

Remarkable balance despite the high ABV.

La Trinidad El Vasco

Barley Wine made with Maris Otter malt and East Kent Golding hops, aged for one year in Porto barrels. Aroma is dominated by pineapple and plums notes, together with noble rot feelings. Wood, oxidation and liquor-like viscosity.

La Trinidad El Fernando

Barley Wine made with Maris Otter Malts and East Kent Golding hops, aged fot one year in Porto barrels. The difference with the other two Leggenda is given by fermentation with saison yeast. Still very balanced despite the high ABV. Fruits and wood dominate the scene, both at nose and mouth.

Leaves a mark that lasts.
